It’s Wednesday, and the Wellness Committee is back to share five new delicious AND nutritious suggestions for your day! Making healthy choices is challenging, but sharing ideas is a great way to get the ball rolling. Let us know in the comments which recipes you like! 😊
Breakfast: Breakfast Egg Muffins
Who doesn’t love a great home cooked breakfast out on the road?! These breakfast egg muffins are a great on-the-go option. They need to be baked ahead of time at home, and then you can bring them along and heat up in the microwave whenever! You can use any veggies or meats.

Lunch: Beef Taco Salad
Taco salads are a great option if you are looking to switch up your lunches! If desired, you can cook the taco meat ahead of time for a great grab-n-go option. After warming up the taco meat (microwave, Hot Logic, or air fryer), just add your lettuce, cheese, dressing, chips and you’re ready to go!

Supper: One Pan Italian Sausage with Veggies & Rice
Looking for a simple, healthy supper on the go? This meal will cover your protein and veggies all in one – you can mix and match to your liking. Feel free to switch it up! This is a great meal to prep ahead of time and then heat up in your Hot Logic. The recipe doesn’t call for rice, but we think it adds a nice base for the meat and veggies. Dessert: Chocolate Peanut Butter Covered Frozen Banana Bites

Snack: Popcorn
A perfect on-the-go snack! You can purchase microwavable popcorn (try to resist the temptation for the movie butter and try the lightly salted) and add any desired seasonings (see link below). If you don’t have a microwave in your truck, you can make this ahead of time at home and store in a zip-lock bag.
