Breakfast: Hard-Boiled Egg & Fresh Fruit
You can boil the eggs ahead of time and store in your truck fridge OR cook them in an air fryer in your truck! Salt & pepper to taste. Add fresh fruit on the side and you’re all set!
Lunch: Boxed Lunch – Time to Get Creative!
Choose some classic lunch items and prepare a few boxes over the weekend! (Tupperware, Ziplock bags, or a brown-paper sack work well for this). Then when you’re out on the road, simply pull out of the fridge and you’re ready to go! For example (choose 3-4): Slices of ham and cheese, carrot sticks, dill pickle, low-fat pretzels or potato chips, apple, raisins, mixed nuts, cheese sticks. We’ve selected the first four items for the grocery list.
Supper: Microwave Loaded Baked Potato
Supper in 15 minutes! Microwave your potato, add toppings, and you’re off! We recommended microwaving a few pre-cooked bacon bits to sprinkle on top and adding shredded cheese, onion and a small spoonful of sour cream.

Desert: Apple Nachos
All you need is apples, caramel, and chocolate chips! Melt the sweets in a microwave safe bowl and then drizzle over sliced apples on a plate. Ready in five minutes!

Snack: Trail Mix
There’s lots of combinations to try here! For a healthier option, mix dried fruit, raisins, sunflower seeds, and assorted nuts! For a little extra sweetness, add in a few M&Ms or leftover chocolate chips from the nachos. This is easy to make ahead of time at home and carry in bulk for the week.
