Recipe: Peppercorn Pork Tenderloin

“It’s nothing incredibly special, but it’s tasty. For me, it’s easiest to start this recipe in the beginning of the day and let it cook. Set it and forget it! I let this cook for 13 hours in the Hot Logic Mini one day, and it was great. I’ve never had anything burn or be overcooked.”

Ingredients

Peppercorn Pork Tenderloin

Flour Tortillas

Colby-Jack Sliced Cheese

Directions

  1. Wrap half the package (approx. 1/2lbs.) peppercorn tenderloin in foil and place in the Hot Logic Mini(HLM) baking dish.
  2. Allow to cook for 4-5 hours
  3. Once cooked, remove the baking dish. With the HLM still plugged in, place 2-4 tortillas in a paper towel and place them directly on the heating element of the HLM. Put the back dish on top.
  4. Zip up the HLM and let the tortillas warm up.
  5. Serve in warm tortilla with a slice of Colby Jack Cheese
